Catalan sausage with escalivada

In bulk / Vacuum packaging or modified atmosphere packaging

This Catalan sausage is prepared with pork’s noblest cuts: shoulder and belly. Once the cuts are grinded and seasoned with salt and pepper, escalivada (smoky grilled red peppers, eggplants and onions) is added. The mixture is then stuffed into a gut and it’s ready to be sold.
